The Light Lunch Specials included “Everyone’s Favorite Salad” -- locally grown lettuce with slow roasted Organic Chicken, Raspberry Vinaigrette, garnished with Roasted Almonds, Naval Orange, Fresh Raspberries, Brie, Balsamic Glaze, Sauteed Pears and Bacon served with Warm French Bread.  The Specials also included Teriyaki Chicken and Grilled Pineapple Sandwich - on warm baguette with provolone cheese, bacon, Maui onions, and lettuce - served with coleslaw and sweet potato fries.

The “Crispy Oyster ‘Po Boy’ Salad” was fried oysters set on mixed greens tossed with a Sherry Vinaigrette and garnished with carrots, capers, hard-boiled egg, croutons, Bermuda onions, tomatoes, and lemon with Jalapeno-Caper tarter sauce. The “Lightfoot Spicy Creamy Tomato Soup” was Roasted Garlic & Sweet Basil topped with Parmesan Cheese & Pumpernickel Croutons. The “Honey Ham Biscuits” were Warm Mini Buttermilk Biscuits with Smoked Virginia Ham. The “Cardini Fish Taco of Tijuana” was lightly battered and fried cod rolled in a flour tortilla with cucumber-tomato salad, avocado, and shredded lettuce served with salsa, creamy cucumber sauce, black beans, rice, and caesar salad.

The “Frozen Key Lime Torte” was on graham cracker crust served with a dollop of whipped cream, toasted coconut, and a coconut macaroon. The “Frozen Peanut Butter Torte” was on chocolate cookie crust served whipped cream, chocolate sauce and roasted peanuts. The “Lightfoot Ice Cream” was the Chef’s Homemade Ice Cream of the Day served in a Sugar Cone with a Fresh Strawberry.
